removing the engine

My Atomic 4 has died (I will soon be selling it for parts). What is the best/easiest method to disconnect the motor in the boat and then remove it from the boat? Can I do this while the sailboat is in the water?
I have already installed an outboard, so I will not be reinstalling an inboard. Will the dynamics of the boat change without the weight of the inboard?
